Whole Wheat Buns

Simple and super healthy whole wheat buns.



Ingredients


  • 600g Whole wheat flour (at least 12.5% gluten, I like using Caputo Integrale)

  • 25g Fresh yeast

  • 30g Honey

  • 50g Olive oil

  • 1 Egg

  • 20g Salt

  • 270g Cold water


Instructions


  1. Combine the whole wheat flour with the fresh yeast honey olive oil egg salt and cold water in a bowl or stand mixer.

  2. Knead the mixture by hand or with a machine until the dough develops a smooth and uniform consistency through gluten development.

  3. Let the dough rest for 15 minutes before dividing and shaping it into individual balls of equal size.

  4. Place the dough balls in a turned off oven for one hour using a bowl of hot water to maintain moisture until they spring back slowly when pressed.

  5. Brush the tops with water and add sesame seeds if desired then bake at 200C for 15 minutes until the buns are fully set.
