Oatmeal Cookies

The ultimate oatmeal cookies: thick, chewy, and loaded with hand-chopped dark chocolate.

Ingredients
1/2 cup (113 g) unsalted butter, softened
80 g brown sugar
40 g granulated sugar
1 egg
3/4 tsp vanilla extract
7/8 cup (107–108 g) all-purpose flour
1 tsp cornstarch
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp ground cinnamon
1/8 tsp ground nutmeg
1 1/2 cups (142–143 g) old-fashioned rolled oats
90–100 g dark chocolate bar, roughly chopped
Instructions
Whisk the softened unsalted butter with the brown sugar and granulated sugar until the mixture is light and fluffy then incorporate the egg and vanilla extract.
Combine the all-purpose flour with the cornstarch baking soda salt cinnamon and nutmeg in a separate bowl to ensure all the spices and leavening agents are evenly mixed.
Gradually add the dry mixture into the wet ingredients and stir until just combined taking care not to overwork the dough.
Fold in the old fashioned rolled oats and the roughly chopped dark chocolate pieces until they are evenly distributed throughout the cookie dough.
Scoop the dough into portions and bake in a preheated oven until the edges are golden and the centers are set but still soft.
