Chocolate Lava Cake

Delicious chocolate lava cake, filled with Lotus Biscoff spread.



Ingredients


  • 100 g dark chocolate

  • 35 g butter

  • 20 g sugar

  • 2 eggs

  • 25 g all-purpose flour

  • Lotus Biscoff spread (about 1 tablespoon)


Instructions


  1. Melt the butter and chopped dark chocolate together until smooth (In the microwave, using short intervals and stirring between each one, Or in a small pan over very low heat, stirring constantly until fully melted). In both cases, remove from heat and let the mixture cool slightly until warm but not hot.

  2. in a bowl, whisk the eggs with the sugar until just combined.

  3. Add the melted chocolate and butter mixture to the eggs and whisk again.

  4. Add the flour and mix gently until just incorporated.

  5. Chill the dough in the refrigerator for 15 minutes.

  6. To keep the Lotus Biscoff filling from mixing into the chocolate dough and to ensure a molten center, freeze a tablespoon of Lotus Biscoff spread for about 30 minutes.

  7. Preheat the oven to 220°C.

  8. Grease an 8 cm diameter × 8 cm height cake ring and place it on a baking tray lined with parchment paper.

  9. Fill the ring halfway with dough, place the frozen Lotus portion in the center, then cover with the rest of the dough.

  10. Bake for 10 minutes.

  11. Let the fondant rest for 5 minutes, then carefully remove the ring (use small sharp knife if necessary).
